No-churn durian ice cream

No-churn durian ice cream (Kem sầu riêng không dùng máy làm kem)

This durian ice cream is heavenly. No ice cream maker or churning required! It’s easy and quick, but the results are awesome. If you love durian, you should give it a try. It’s a great dessert to beat the heat.


No-churn durian ice cream (Kem sầu riêng không dùng máy làm kem)
♥ Ingredients:
Makes about 1.5 lbs (680 g) ice cream

¾ cup (210 g) frozen durian, thawed
2 large eggs
⅓ cup (67 g ) sugar
½ cup (120 ml) whole milk
1 cup (240 ml) heavy cream
¼ tsp salt

♥ Instructions:

1) Discard all the durian seeds, add milk. Set on medium heat. Stir and bring to a boil. Let it boil for 1 minute then remove from the stove. Set aside and let it cool.

  • No need of cooking if using fresh durian, only blend fresh durian with milk until smooth.
2) Place eggs, salt, and sugar in a heatproof bowl. Place over a saucepan of simmering water and beat with an electric mixer until thick and pale. Transfer into an other bowl to cool faster.
  • Make sure the egg is cooked if you make ice cream for small kids or pregnant women (the temperature is at least 145℉ (63℃)) 
3) Chill the heavy cream and the whisk in freezer for 5 minutes. Then whip until stiff peaks form. Gently fold in the egg mixture until well combined. 
  • Be careful not to over whip. If the cream starts to separate, it won't work for this recipe.
4) Transfer in a covered storage container and place in freezer. Freeze for at least 4 hours or overnight.

  1. Thanks for sharing the recipe of home made no churn icecream. I have also tried to make it from some other recipe but i got failed. Hope this recipe will work.
